Is Odoo Accounting enough to replace our finance system?

For most small and mid-sized businesses, yes, once localisation and reporting are configured. The judgement call is usually about statutory reporting in your jurisdiction, which we check before recommending a move.

Can Odoo handle book and tax depreciation separately?

Not with a single native asset board. Running book and tax in parallel is a common requirement and is what our dual-board asset work addresses.

Does Odoo have multi-level approvals?

Several apps have their own approval features. A consistent, condition-driven chain across documents is usually a build, which is what makes it auditable rather than informal.
